Smoked Salmon Tartar – Grilled toast points, caper emulsion, onion
relish and micro greens

Blistered Brussels with Bacon – Crispy brussels sprouts topped with
cilantro vinaigrette, parmesan cheese, and bacon

Course Three – Choose Two

Grilled Pork Chop – Creamy southern grits, crispy brussels sprouts
with a green chili beurre blanc

Pan Seared Salmon – Grilled Alaskan salmon filet, atop grilled
brocco-lini, quinoa “risotto” with a gremolata butter
